People often ask us, “What goes on during the winter, when there are no grapes?”. The cellar crew is always busy staying on top of cleaning and maintaining equipment. Grapes harvested in the fall are in the process of becoming your favorite PC wines and others have been placed in barrels to age over the next several months. All the equipment we use, from harvest to bottling get a lot of extra TLC over the winter. Check some of what we’ve got going on in the cellar below:
