pH is the measurement of free hydrogen ions in a solution. Most wines fall in a pH of 3.0 to 3.7 though some may be a little higher or lower. The pH may be the single most important set of data in winemaking. pH gives you an idea on how the wine will taste and feel, the effectiveness of sulfur dioxide, as well as how it will be affected by microbial issues.
